You can try softening it well in the microwave then puree it with the beans in the food processor before adding.

The cake was delicious, however the cheesecake cracked a lot on top, after 60 mins it was still really jiggley so I ended up cooking for around 80 minutes. The edges and base ended up a bit too brown but I don’t think I could have cooked it any less without the middle being uncooked. I covered the cracked top with the icing so it still looked great, and tasted great after cutting off the burnt part. My oven is pretty dodgy so I’m sure it would work better in a good oven.

Great recipe. I used Mexican Oreigno instead of reg Oregino and I was short a can of pinto beans so I just doubled the black beans. No one seemed to mind.
My family likes lots of Jalapenos.
