A Summery Corn Salsa Recipe

Corn salsa that's much better than Chipotle! It's a healthy dip that also doubles well as a side dish.

Fresh corn and bell pepper are fire roasted over a hot grill or gas stove flame for a beautiful smokey char, then it's tossed with a colorful plethora of other complementary fresh Mexican-style ingredients.

It has such a tantalizing blend of flavors that's is makes the perfect chip dip, or its delicious served over salmon, shrimp, chicken or beef (we love the salmon option).

Plus it's a versatile salsa with lots of ways to switch things up (see ideas below).

It's best made in season when you can get prime sweet yellow corn, but during the colder months try it with frozen corn too.

What is an Elote?

Elotes, also known as grilled Elote Mexicano, Mexican street corn, or Mexican grilled corn, is a popular Mexican street food. “Elote” means “corn on the cob” in Spanish, and the recipe consists of corn on the cob that has been grilled and slathered with a mayo or crema sauce, topped with Cotija cheese, and dusted with chili powder.

In Mexico, it is sold to locals and tourists from street carts much like pretzels or hot dogs in New York. Once you try elotes for the first time you'll be wondering "Where has this been all my life?!"

It's perfectly juicy and crisp, it has a delicious balance of sweet and spicy heat, the creamy coating with a zip of lime and chili powder perfectly compliments it's mellow flavor, and the cheese finish makes it amazingly crave-worthy.

Lentil Salad

This makes a great lunch or dinner side. It has an abundance of freshness along with a good heartiness to it, and it's easy to make.

You'll find it has a great blend of textures and flavors and it pairs beautifully with chicken or salmon.

You can use a variety of herbs based on what you have. I always like to include parsley then for the second herb addition opt for either cilantro, basil or mint - each will give a different flavor profile so it's nice to switch things up.

Serve it room temp or nice and chilled for a refreshing salad (just keep in the fridge within 2 hours of preparing).

Chicken Tinga Tacos

Tired of the same taco recipe over and over? This is a delicious, flavorful recipe to brighten up that same old rotation.

This stove-top simmered chicken tinga makes an impressive taco filling and there's really not a whole lot to it. It cooks in 30 minutes meaning you don't have to wait hours and hours like you do for a shredded beef or pork taco filling.

If however you do have more time, you could easily get away with simmering it low and slow in the crockpot instead (it should be done in about 3 to 4 hours on low heat).

Is it Spicy?

Yes chicken tinga is deliciously spicy because of the added chipotle chilies in the dish. I've listed to add 1 - 3 chipotle chilies to taste depending on the heat level you prefer (we love it with 3!).

Then there is a swap noted in the substitutes below if you want a milder version.

Our Favorite Vegetarian Black Bean Burger!

When we think of vegetarian burgers we often think of those mediocre, flavorless or dry burgers we've had that left us wishing we had made a different meal choice.

These black bean burgers will actually leave you wondering why you haven't had black bean burgers on regular rotation on your dinner menu for years. And you'll love that the food processor does most of the work!

The great thing about these is that they don't weigh you down the way a greasy hamburger does. It's something you can feel good about eating.

This black bean burger isn't dry, it has plenty of flavor and even some richness to it (thanks to the mayo and egg yolks), and the oats and peppers give it a bit of texture. Believe it or not even my kids love these.

They're best served shortly after they've been freshly pan fried and those exterior edges are nice and crisp, though it makes a batch of six and extras will reheat decently well (with a bit of olive oil just in the microwave) when you need a quick lunch.

Our favorite way to eat them is actually bun-less with a small mound of tasty toppings (like cheese, avocado, tomatoes, and salsa), but just like with a regular hamburger you can serve them up however you'd like.

Easy Skillet Steak Tacos

Tacos are one of the best foods out there and these steak tacos are no exception!

They are brimming with bright lime flavor and delicious seasonings, the hint of honey in the marinade helps the steak sear beautifully, and the toppings that crown them are the perfect finishing highlight.

The key here is just to pick out good quality steak. I recommend looking for sirloin with a generous amount of marbling or using prime grade. Marbling is the fat swirled throughout the steak, more marbling means more flavor and a more tender piece of meat (I buy prime top sirloin at Costco for about $10 a pound, it's a great place to get good quality steak).

I think it's safe to say these tacos will quickly become a family favorite! They take little effort yet finish with big flavor.

Stuffed Poblano Peppers

Many of you have had classic stuffed peppers and these are similar but with a Southwestern flavor and poblano peppers (aka pasilla peppers) are used instead of bell peppers. Plus these are a bit of a healthier option too.

They come together easily and no boiling is required beforehand. You'll just bake the peppers until they start to soften and while they bake you make the filling in a skillet on the stovetop. Then stuff the peppers and finish them off in the oven.

You really don't need much else to serve with them, though if you wanted something else you can't go wrong with tortilla chips, salsa and guacamole.

The key here is just to find the larger poblano peppers at the grocery store (those little ones wont fit much filling), and I like to find some that will sit flat on each side if possible.

What is Fideo?

Fideo is a Mexican pasta. It’s much like spaghetti but rather than long strands it's cut into small pieces that are about 1 to 2-inches in length. It's usually made from semolina and durum wheat flour.

One of the most frequent ways it's used in Mexican and Spanish cuisine is in this soup.

'Sopa de fideo' translates from Spanish to English as 'noodle soup.' It is a mildly flavored soup almost like a classic Italian tomato soup, but with it's final toppings it takes on bright fresh Mexican flavor instead.

It is one of the most foolproof recipes you can make! Plus it's such a comforting feel good soup that both kids and adults love!

Homemade Shrimp Fried Rice

This easy shrimp fried rice recipe is a classic stir-fry favorite! It's completely delicious and easily worthy of being included in your dinner rotation on repeat.

I've made this version to be generous with the vegetables including carrots, onions, peas, bell pepper and cilantro. And you'll also find a fair amount of shrimp to make it more of a meal in one.

The important thing to note here (as with just about any fried rice recipe) is that you'll want to use leftover rice from the day before so it will soak up the moisture and doesn't end up soggy. In other words plan ahead if you don't usually have some on hand.

The chopping will take a bit of time but from there it's a total breeze and it cooks quickly. And when it's done to make it spicy finish your serving with Sriracha to your hearts content.
